{"id":26203,"date":"2018-08-13T16:41:54","date_gmt":"2018-08-13T20:41:54","guid":{"rendered":"https:\/\/www.tun.com\/blog\/?p=26203"},"modified":"2022-03-16T10:32:28","modified_gmt":"2022-03-16T14:32:28","slug":"women-killin-it-fight-against-hunger-college","status":"publish","type":"post","link":"https:\/\/www.tun.com\/blog\/women-killin-it-fight-against-hunger-college\/","title":{"rendered":"Women Killin&#8217; It in Fight Against Hunger on College Campuses"},"content":{"rendered":"<p><span style=\"font-weight: 400;\">The price of a college education is often synonymous with hefty loans and burdensome fees, but what if it\u2019s so much that you can\u2019t even pay for your next meal?<\/span><\/p>\n<p><span style=\"font-weight: 400;\">For up to <\/span><a href=\"http:\/\/journals.sagepub.com\/doi\/abs\/10.3102\/0013189X17741303\"><span style=\"font-weight: 400;\">half of all college students<\/span><\/a><span style=\"font-weight: 400;\">, this is a stark reality. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Going hungry in college is an issue that plagues students all over the country, from community colleges to elite public and private institutions. Food insecurity is strongly linked to lower graduation rates, but many students are often forced to choose between educational expenses and food. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Fortunately, initiatives to help fight hunger are being implemented by students, faculty and activists across the country, and many of them are led by women. <\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In this article, we highlight five women who are \u201ckillin it\u201d in their efforts to relieve hunger on college campuses.<\/span><\/p>\n<h2 style=\"text-align: center;\"><b>1. Anna Townsend<\/b><\/h2>\n<p style=\"text-align: center;\"><i><span style=\"font-weight: 400;\">Former student, Vice President and Garden Fellow for Campus Kitchen at University of Kentucky<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">The Campus Kitchen at the University of Kentucky (CKUK) is a student-run campus initiative that works to supply healthy meals to students struggling with hunger and provide a sustainable approach to reducing food waste on campus. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Since its inception in 2014, CKUK has served <\/span><a href=\"https:\/\/dhn-hes.ca.uky.edu\/CKUK\"><span style=\"font-weight: 400;\">8,795 meals and rescued 10,888<\/span><\/a><span style=\"font-weight: 400;\"> pounds of food. Its efforts were so powerful that in 2016, CKUK was named \u201cCampus Kitchen of the Year\u201d by the Campus Kitchen project, a national leader in community service for helping students with hunger. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">But perhaps the CKUK wouldn\u2019t have been so well-accomplished if not for former Vice President and Garden Fellow <\/span><a href=\"https:\/\/uknow.uky.edu\/campus-news\/graduating-students-research-leaves-mark-campus-kitchen-uk\"><span style=\"font-weight: 400;\">Anna Townsend<\/span><\/a><span style=\"font-weight: 400;\">. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Townsend joined the project as a freshman in 2014 and, by the time she was ready to graduate in 2017, she had developed a system that would leave a lasting impression on the organization. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">With funding from the Student Sustainability Council, and as a part of her Lewis Honors College Capstone, Townsend developed a type of <\/span><a href=\"https:\/\/www.tun.com\/blog\/university-kentucky-campus-kitchen-fight-hunger\/\"><span style=\"font-weight: 400;\">indoor gardening method<\/span><\/a><span style=\"font-weight: 400;\"> that is both feasible and efficient for the organization. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Townsend\u2019s research, which involved growing different types of lettuces in container, vertical and hydroponic gardens and assessing their feasibility, will enable CKUK to produce fresh vegetables in cooler months. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">She only used containers donated by other CKUK volunteers for her vertical garden, which limits consumer waste and makes for a sustainable way to grow produce.<\/span><\/p>\n<figure id=\"attachment_19749\" aria-describedby=\"caption-attachment-19749\" style=\"width: 827px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-19749 size-full\" src=\"https:\/\/www.tun.com\/blog\/wp-content\/uploads\/2017\/05\/University-of-Kentucky-1.png\" alt=\"\" width=\"827\" height=\"825\" \/><figcaption id=\"caption-attachment-19749\" class=\"wp-caption-text\">Image: University of Kentucky<\/figcaption><\/figure>\n<p><span style=\"font-weight: 400;\">\u201c<\/span><span style=\"font-weight: 400;\">By establishing indoor gardens for CKUK, I am more confident in my skills as a researcher and advocacy for preventable issues, such as food waste and hunger,\u201d Townsend previously told TUN. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cAs a result of my research, CKUK is able to support sustainable agriculture in several ways: maintaining indoor and outdoor gardens to provide food for healthy meals, teaching students about gardening and nutrition, and presenting this research at conferences to inspire other organizations and communities.\u201d<\/span><\/p>\n<p>[divider]<\/p>\n<h2 style=\"text-align: center;\"><b>2. Hannah DePorter<\/b><\/h2>\n<p style=\"text-align: center;\"><i><span style=\"font-weight: 400;\">Former student, University of Wisconsin-Madison<\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">Thanks to Hannah DePorter, UW-Madison now has a campus food shed that provides students and staff <\/span><a href=\"https:\/\/www.tun.com\/blog\/university-of-wisconsin-madison-student-campus-food-shed\/\"><span style=\"font-weight: 400;\">access to fresh produce<\/span><\/a><span style=\"font-weight: 400;\"> for free from July to October. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">The <\/span><a href=\"https:\/\/www.facebook.com\/pg\/campusfoodshed\/about\/?ref=page_internal\"><span style=\"font-weight: 400;\">Food Shed<\/span><\/a><span style=\"font-weight: 400;\"> has four large refrigerators, which are placed at four different locations on campus for convenient access and is stocked with local produce such as beets, carrots, onions, squash, potatoes, lettuce, spinach, kale, tomatoes, oregano, basil, dill, and cranberries.<\/span><\/p>\n<figure id=\"attachment_20753\" aria-describedby=\"caption-attachment-20753\" style=\"width: 500px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"size-full wp-image-20753\" src=\"https:\/\/www.tun.com\/blog\/wp-content\/uploads\/2017\/06\/foodshed.jpg\" alt=\"\" width=\"500\" height=\"333\" \/><figcaption id=\"caption-attachment-20753\" class=\"wp-caption-text\">Image: Jeff Miller<\/figcaption><\/figure>\n<p><span style=\"font-weight: 400;\">DePorter conceived of the idea for a food shed when she was visiting various agriculture research stations run by the university, and noticed that some produce was being wasted even though extra produce was donated to food banks.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cWhile being in the fields and weeding and harvesting there was just a lot of stuff left to compost,\u201d DePorter said in a statement.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cI was just thinking about how all that food could be given to more people.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">With that in mind, she proposed the idea and was awarded a $5,000 grant from the Kemper K. Knapp Bequest. After that, it took only 9 months for her idea to come to fruition.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In a prior interview with TUN, DePorter told us about the importance of tackling both hunger and waste. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cI think the food shed is really important because it tackles the intersection of food security and food waste,\u201d she said.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cBy ending food waste, we can better tackle food insecurity by providing fresh high quality produce free of charge that would otherwise be wasted. It is a win-win situation and we can\u2019t wait to see how this takes off.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">[divider]<\/span><\/p>\n<h2 style=\"text-align: center;\"><b>3. Rachel Sumekh<\/b><\/h2>\n<p style=\"text-align: center;\"><i><span style=\"font-weight: 400;\">Founder\/CEO of Swipe Out Hunger <\/span><\/i><\/p>\n<p><a href=\"http:\/\/www.swipehunger.org\/rachel\"><span style=\"font-weight: 400;\">Rachel Sumekh<\/span><\/a><span style=\"font-weight: 400;\"> was a college student at UCLA when she created the idea for <\/span><a href=\"http:\/\/www.swipehunger.org\/\"><span style=\"font-weight: 400;\">Swipe Out Hunger<\/span><\/a><span style=\"font-weight: 400;\"> &#8212; an organization that would later become a leading force in addressing hunger on college campuses. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Swipe Out Hunger is an initiative that allows students to donate their unused meal swipes to those in need. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cStudents can enter the dining hall with the voucher and have a warm, wholesome meal,\u201d Sumekh <\/span><a href=\"https:\/\/www.nytimes.com\/2016\/06\/23\/education\/food-pantries-address-a-growing-hunger-problem-at-colleges.html\"><span style=\"font-weight: 400;\">told The New York Times<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The program began in 2010 as a project that Sumekh took on with a few of her college friends, and since then, it has been implemented in 37 universities, and served 1.4 million meals. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">The organization is so effective that it was called upon to draft a piece of legislation addressing college student hunger &#8212; a legislation that the state of California adopted and put $7.5 million behind. <\/span><\/p>\n<p><a href=\"https:\/\/www.facebook.com\/attn\/videos\/1586233678078752\/\">https:\/\/www.facebook.com\/attn\/videos\/1586233678078752\/<\/a><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Sumekh\u2019s work has been recognized by The Obama White House and The New York Times, and even landed her on the <\/span><a href=\"https:\/\/www.forbes.com\/profile\/rachel-sumekh\/\"><span style=\"font-weight: 400;\">Forbes 30 Under 30<\/span><\/a><span style=\"font-weight: 400;\"> list. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8220;If what we&#8217;re doing is helping people stay in school, get a degree and get a great job then this has massive impact,&#8221; Sumekh <\/span><a href=\"https:\/\/money.cnn.com\/2017\/06\/12\/pf\/college\/college-swipe-out-hunger\/index.html\"><span style=\"font-weight: 400;\">told CNN<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">[divider]<\/span><\/p>\n<h2 style=\"text-align: center;\"><b>4. Janet Napolitano<\/b><\/h2>\n<p style=\"text-align: center;\"><i><span style=\"font-weight: 400;\">University of California, President; Former Secretary of Homeland Security 2009-13; former Governor of Arizona \u00a02003-09; Attorney General of Arizona 1998-2003; U.S. Attorney for the District of Arizona from 1993-97<\/span><\/i><\/p>\n<p><a href=\"https:\/\/en.wikipedia.org\/wiki\/Janet_Napolitano\"><span style=\"font-weight: 400;\">Janet Napolitano<\/span><\/a><span style=\"font-weight: 400;\"> is an established public servant with a rich history of leading organizations at both the state and federal level. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Now, as the 20th president of the University of California, Napolitano is a champion in the fight against hunger. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">In July of 2014, Napolitano launched the <\/span><a href=\"https:\/\/www.ucop.edu\/global-food-initiative\/\"><span style=\"font-weight: 400;\">UC Global Food Initiative<\/span><\/a><span style=\"font-weight: 400;\"> &#8212; an initiative that aims to demonstrate and export solutions for food security, health and sustainability in California and around the world. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">The Global Food Initiative grew out of UCLA\u2019s Healthy Campus Initiative and has become a large, system-wide effort to address one of the most critical issues of today: how to sustainably and nutritiously feed a world population expected to reach 8 billion people by 2025.<\/span><\/p>\n<p><iframe title=\"Bold Solutions: UC Global Food Initiative\" width=\"500\" height=\"281\" src=\"https:\/\/www.youtube.com\/embed\/ajCYEnBO4bM?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe><\/p>\n<p><span style=\"font-weight: 400;\">The initiative spans across UC\u2019s 10 campuses and draws on leadership in the fields of agriculture, medicine, nutrition, climate science, public policy, social science, biological science, humanities, arts and law.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Through the UC Global Food Initiative, Napolitano and her team have addressed food security among UC students with the creation of <\/span><span style=\"font-weight: 400;\">new and expanded food pantries, \u201cSwipe Out Hunger\u201d programs that enable students to donate meals to peers, awareness campaigns, and CalFresh enrollment drives.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The Initiative is working toward four goals that will help address food security and sustainability practices:<\/span><\/p>\n<ol>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Work together across the UC system to create solutions that improve food security, health and sustainability throughout California, the U.S. and the world;<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Identify best practices to address food needs and create toolkits to share locally and globally;<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Use the latest UC research to help communities access healthy, sustainable food; and<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Apply UC expertise to shape and drive food policy discussions.<\/span><\/li>\n<\/ol>\n<p><span style=\"font-weight: 400;\">\u201cClimate change and population growth fuel additional uncertainty and urgency about how to sustainably feed the world,\u201d Danielle Smith, UC Global Food Initiative spokesperson, told TUN. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cPresident Napolitano and campus chancellors decided to launch the initiative after recognizing that the university system is uniquely positioned to play a leading role in addressing these interconnected challenges.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">[divider]<\/span><\/p>\n<h2 style=\"text-align: center;\"><b>5. Cynthia Jackson \u00a0<\/b><\/h2>\n<p style=\"text-align: center;\"><i><span style=\"font-weight: 400;\">Associate Director of Office of Solid Waste Management and Recycling, Georgia Institute of Technology <\/span><\/i><\/p>\n<p><span style=\"font-weight: 400;\">As the associate director of the Office of Solid Waste Management and Recycling, <\/span><a href=\"http:\/\/www.recycle.gatech.edu\/staff\"><span style=\"font-weight: 400;\">Cynthia (Cindy) Jackson<\/span><\/a><span style=\"font-weight: 400;\"> drives forward sustainable practices.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Georgia Tech first adopted its annual <\/span><a href=\"https:\/\/www.tun.com\/blog\/sustainable-ways-to-reduce-waste-campus-move\/\"><span style=\"font-weight: 400;\">Move-In\/Move-Out<\/span><\/a><span style=\"font-weight: 400;\"> program in 1998 at the behest of Jackson, who sought to reduce the waste generated by nearly 10,000 students moving out each year.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In 2016, Jackson decided to use the Move-Out program to team up with <\/span><a href=\"http:\/\/klemiskitchen.gatech.edu\/\"><span style=\"font-weight: 400;\">Klemis Kitchen<\/span><\/a><span style=\"font-weight: 400;\">, an initiative to help hungry Georgia Tech students. Rather than sending nonperishable goods to Atlanta Food Bank, Jackson and her team send these items to Klemis Kitchen, which are then distributed to food-insecure students at Georgia Tech. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">While Atlanta Food Bank serves a need, Jackson thinks it\u2019s important to support Klemis Kitchen, as the food \u201cgoes from students to students.\u201d The 2016\u2019s Move-Out led to donations of 534 pounds of nonperishable food items to Klemis Kitchen.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cThis is not our first partnership, but it is certainly our most meaningful,\u201d Jackson said in a <\/span><a href=\"https:\/\/www.news.gatech.edu\/2016\/11\/21\/move-out-donations-support-students-need\"><span style=\"font-weight: 400;\">statement<\/span><\/a><span style=\"font-weight: 400;\">. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cIt means so much to the students who need help to realize that some of this help is actually coming from their peers and that their peers care,\u201d said <\/span><a href=\"http:\/\/www.eas.gatech.edu\/people\/hartley-dr-dana\"><span style=\"font-weight: 400;\">Dana Hartley<\/span><\/a><span style=\"font-weight: 400;\">, Georgia Tech\u2019s campus liaison for homeless students, said in a statement.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cIt helps them feel less alone.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In the first year, the non-perishable foods collected during student move out helped to support Klemis Kitchen for the majority of the fall semester, helping it to become a long-term self-sustainable operation.<\/span><\/p>\n<h2><b>Conclusion <\/b><\/h2>\n<p><span style=\"font-weight: 400;\">High tuition fees and unaffordable meal plans at many institutions have led to an increasing number of food insecure students.
