{"id":20228,"date":"2017-06-02T12:03:01","date_gmt":"2017-06-02T16:03:01","guid":{"rendered":"https:\/\/www.tun.com\/blog\/?p=20228"},"modified":"2019-03-12T10:53:49","modified_gmt":"2019-03-12T14:53:49","slug":"university-of-minnesota-student-led-food-pantry-plants-organic-garden","status":"publish","type":"post","link":"https:\/\/www.tun.com\/blog\/university-of-minnesota-student-led-food-pantry-plants-organic-garden\/","title":{"rendered":"University of Minnesota Student-Led Food Pantry Plants Organic Garden"},"content":{"rendered":"<p><span style=\"font-weight: 400;\">According to the <\/span><a href=\"http:\/\/www.bhs.umn.edu\/surveys\/survey-results\/2015\/UofMTwinCities_CSHSReport_2015.pdf\"><span style=\"font-weight: 400;\">2015 Boynton Student Health Survey<\/span><\/a><span style=\"font-weight: 400;\">, about 10.2% of University of Minnesota students reported that, within the past 12 months, they had run out of food and didn\u2019t have the money to buy more food. Over the same period, 17.5% percent of the university\u2019s students worried about their food running out before they had money to buy more. The study also found an increase of 33% in students reporting <\/span><span style=\"font-weight: 400;\">a mental health diagnosis in their lifetime, as compared to 2013.<\/span><\/p>\n<h5><span style=\"color: #333333;\"><b>Nutritious U Food Pantry<\/b><\/span><\/h5>\n<p><span style=\"font-weight: 400;\">When Rebecca Leighton (BS Nutrition \u201815), currently a second-year graduate student at the university\u2019s School of Public Health, heard about the study in the spring of 2016, she decided to take action. Leighton tapped her degree in nutrition and combined it with her research topic for graduate school to find a solution to help the students in need. \u201cMy research for my degree is interviewing food-insecure students,\u201d she said <\/span><a href=\"http:\/\/www.sph.umn.edu\/news\/sph-student-tackles-food-insecurity-among-students\/\"><span style=\"font-weight: 400;\">in a statement<\/span><\/a><span style=\"font-weight: 400;\">. \u201cI\u2019m learning about the psychological impact of food insecurity.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Leighton started <\/span><a href=\"https:\/\/gopherlink.umn.edu\/organization\/NUP\"><span style=\"font-weight: 400;\">Nutritious U Food Pantry<\/span><\/a><span style=\"font-weight: 400;\">, <\/span><span style=\"font-weight: 400;\">an on-campus food pantry, to provide students in need with healthy food. <\/span><span style=\"font-weight: 400;\">\u201cWe don\u2019t just want to provide emergency food to students who will use it,\u201d Leighton <\/span><a href=\"https:\/\/www.cfans.umn.edu\/alumni-friends\/ways-to-connect\/cfans-connections\/march-2017\/leighton-mar-17\"><span style=\"font-weight: 400;\">declared<\/span><\/a><span style=\"font-weight: 400;\">. \u201cWe want to increase their access to healthy food, increase their well-being and overall increase their learning potential.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Leighton believes that access to healthy food will also help alleviate anxiety in students. \u201cThis is what I study,\u201d Leighton <\/span><a href=\"http:\/\/www.sph.umn.edu\/news\/sph-student-tackles-food-insecurity-among-students\/\"><span style=\"font-weight: 400;\">explained<\/span><\/a><span style=\"font-weight: 400;\">. \u201cI know the overall importance of food to the whole person. Most people understand that nutritious food is key to physical health. What they don\u2019t always understand is that feelings of anxiety around accessing food can also impact a person\u2019s mental health.\u201d<\/span><\/p>\n<p>Leighton is adamant that only healthy food is the solution. &#8220;Food insecurity is a big problem that college students are facing and at the same time, our country is facing some serious issues when it comes to chronic diseases related to obesity,\u201d Leighton told TUN.<\/p>\n<blockquote><p>I believe all students should have reliable access not only to food, but to fresh and healthy food. That is why the Nutritious U Food Pantry stocks mostly fresh produce and other wholesome foods.<\/p><\/blockquote>\n<figure id=\"attachment_20232\" aria-describedby=\"caption-attachment-20232\" style=\"width: 960px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"size-full wp-image-20232\" src=\"https:\/\/www.tun.com\/blog\/wp-content\/uploads\/2017\/06\/UNMPantry.jpg\" alt=\"\" width=\"960\" height=\"301\" \/><figcaption id=\"caption-attachment-20232\" class=\"wp-caption-text\">The Nutritious U Food Pantry, Facebook<\/figcaption><\/figure>\n<p><span style=\"font-weight: 400;\">Nutritious U Food Pantry has hosted two events successfully &#8212; one in February and another in March of this year. TUN found out from Leighton that the pantry served about <\/span><span style=\"font-weight: 400;\">550 students at the first event and 927 students at the second event. Each event was scheduled for 3 days, but the pantry ran out of food after a day and a half during the first event. To expand the reach of the pantry, Leighton is working on making the pantry a permanent fixture starting this fall. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Leighton told TUN that she has a<\/span><span style=\"font-weight: 400;\"> leadership team of 8 undergraduate students who helped her start the pilot pantries and are now working with her to establish a permanent pantry. The pantry also relied on other student volunteers to staff the pilot pantries.<\/span><\/p>\n<h5><span style=\"color: #333333;\"><b>New Organic Garden<\/b><\/span><\/h5>\n<p><span style=\"font-weight: 400;\">In line with Leighton\u2019s ambition to implement a permanent pantry, Nutritious U Food Pantry now has a garden plot, which will supply <\/span><a href=\"http:\/\/www.mndaily.com\/article\/2017\/05\/nutritious-u-food-pantry-plants-the-seeds-for-fall\"><span style=\"font-weight: 400;\">one-third<\/span><\/a><span style=\"font-weight: 400;\"> of what the pantry needs. It is estimated that the garden will yield up to 1,300 pounds of fresh, organic vegetables. Leighton and her team intend to plant seeds through mid-summer and then start harvesting. They also intend to use the garden as an educational tool to teach students about new food options, so they will host cooking classes, educational events and canning days.<\/span><\/p>\n<figure id=\"attachment_20230\" aria-describedby=\"caption-attachment-20230\" style=\"width: 1000px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-20230 size-full\" src=\"https:\/\/www.tun.com\/blog\/wp-content\/uploads\/2017\/06\/stgarden.jpg\" alt=\"\" width=\"1000\" height=\"668\" \/><figcaption id=\"caption-attachment-20230\" class=\"wp-caption-text\">Image: Chris Dang<\/figcaption><\/figure>\n<p><span style=\"font-weight: 400;\">Leighton believes that students would be more willing to explore other food options if they have access to the vegetables from the garden. \u201cIf you\u2019re on a limited budget, are you really going to spend your very few precious dollars on a new vegetable that you\u2019ve never tried before and maybe you won\u2019t like?\u201d she told the Minnesota Daily. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">The new garden is important for both the pantry and the students. \u201cThe new garden is a great addition because it not only contributes fresh produce to the pantry, it allows students the opportunity to learn more about where their food comes. I think this teaches an appreciation for food and is important to learn at this time,&#8221; Leighton told TUN.<\/span><\/p>\n<h5><span style=\"color: #333333;\"><b>An Award for Leighton<\/b><\/span><\/h5>\n<p><span style=\"font-weight: 400;\">Leighton is passionate about her cause, and has put it in a lot of time and effort in the past year to get the pantry going. Her hard work was recognized by the university, and she <a href=\"http:\/\/www.sph.umn.edu\/news\/rebecca-leighton-wins-university-award-starting-food-pantry-students\/\">received<\/a> the University of Minnesota President\u2019s Student Leadership and Service Award for starting the Nutritious U Food Pantry.
